I made this tart really in a hurry and because I had broccoli and zucchini sitting in my fridge. You do not have to follow fancy recipes and buy dedicated ingredients. Sometimes, it is enough to throw into a tart whatever ingredients you have available in the fridge. Just be carefully to combine them wisely to obtain a dedicated taste.

Ingredients:
- 400g shortcrust pastry with discarded sourdough
- 200g lard
- 1 zucchini (grated)
- 1/2 broccoli (grated)
- 100g emmental cheese (grated)
- 3 eggs + 1 (for brushing the top)
- 250g mascarpone
- salt
- pepper
Directions:
- Beat the 3 eggs and incorporate mascarpone.
- Fry the lard in a pan. (no oil or grease needed, lard itself has plenty)
- Lay the shortcrust pastry flat, on the bottom of a tart pan (25cm diameter).
- Prick the crust with a fork to avoid inflating during bake.
- Add the cooled lard.
- Add the grated zucchini and broccoli
- Add the grated emmental cheese.
- Pour the composition of egg mascarpone. Press with a fork to lay the ingredients flat.
- [Optional] From the remaining pastry crust, cut hexagons and little Christmas trees inside. Lay them over the ingredients in the pan.
- [Optional] Brush the top with egg and fill in the little Christmas trees with broccoli.
- Bake in the preheated oven at 180ÂșC for 30minutes with an aluminium foil cover and 30 minutes without cover.
Now you can serve it warm or you can wait to cool.
