I love its pronounced taste so let's give it a try in a sandwich white bread.
Ingredients:
- 750g water (room temperature)
- 250g liquid sourdough (100% hydration)
- 550g manitoba flower
- 550g white wheat bread flour
- 15g salt
- 43g black sessame
Directions:
- 9:45 Mix all ingredients with a standing mixer.
- 10:00 Cover the bowl with a lid and let it stand at room temperature for the first fermentation.
- 13:00 Take the dough out of the bowl and shape it in 2 oblong loaves.
- 13:15 Put the loaves in floured baking pans and let them raise for the 2nd fermentation, covered with a towel to avoid drying at the surface.
- 17:30 Bake in the preheated (wood fire) oven at 230ÂșC for 25 minutes.
- 17:55 Take the breads out of the oven and let them cool on a wire rack.
