On top of the nuts and raisins there is a secret ingredient inside that makes this muffin wanted: a cube of Turkish delight.
Ingredients: (for 12-15 cupcakes)
- 400g flour
- 75g sugar
- 2 teaspoons baking powder
- a pinch of salt
- 70g butter (room temperature)
- 200ml milk
- 1 egg
- 1 tablespoon rhum essence
- 50g raisins
- 75g nuts (chopped)
- 12 pieces of Turkish delight (2cm cubes), one for each muffin
Directions:
- Preheat the oven at 200ÂșC.
- Mix all ingredients with a standing mixer until well combined.
- With an ice cream scoop pour the composition into cupcake cases. I use silicone cases as they are reusable and easy to clean. One full scoop fits perfectly for a muffin.
- Hide one cube of Turkish delight in the middle of the dough of each muffin.
- Bake for 25 minutes.
