Yogurt and chocolate biscuits

I have found this recipe in a book that has almost the age of my mother. As usually, I couldn't resist to adapt it with the available ingredients. My daughter was delighted to cut all the biscuits and of course ... to eat a big part of them :)

Ingredients:
  • 250g yogurt
  • 2 tablespoons of olive oil
  • 1 tablespoon of sugar
  • 1 teaspoon almond essence
  • 1 teaspoon baking soda (sodium bicarbonate)
  • a pinch of salt
  • 350g all purpose flour
  • 100g melted chocolate

Directions:
  1. Using a standing mixer, mix the yogurt  with oil and sugar until it becomes creamy.
  2. Add essence, baking soda, salt and mix.
  3. Add the flour slowly and mix until you obtain a dough.
  4. Stretch the dough on a floured board using a rolling pin. (4-5mm thick).
  5. Cut the dough using biscuits cutters.
  6. Lay the biscuits on a silicon sheet on the bottom of a tray.
  7. Bake them in the preheated oven at 200ÂșC for 20 minutes.
  8. Let them cool on a rack.
  9. Deep the biscuits by half in melted chocolate and put them back on the silicone sheet for the chocolate to cool.
