Ingredients:
- 1.5kg chicken breast (diced)
- 2 tablespoons olive oil
- 1 onion (diced)
- 5 garlic cloves (grated)
- 3 cm ginger (grated)
- 2 hot peppers (diced)
- 1/2 tablespoon turmeric
- 2 tablespoon cumin (powder)
- 2 tablespoons coriander (powder)
- 2 big sweet potatoes (peeled and diced)
- 400ml coconut milk
- 3l water
- salt
- pepper
- parsley (for decoration)
Directions:
- Boil the chicken for 15 minutes and skim the "scum" created on the surface.
- Add sweet potatoes and let them boil for another 15 minutes.
- Meanwhile, in a pan, pour the olive oil and heat it.
- Add the garlic, onion, ginger and hot peppers and let them cook for a while in the pan.
- Add cumin, turmeric and coriander powders.
- Put the fried ingredients in the big pot with the boiled chicken breast.
- Add the coconut milk, salt and pepper and stir.
- Let it boil for another 5-10 minutes and that's it.
- Serve it with coriander or parsley.
