One day I took the courage to make a pureed myself. I was pleasantly surprised to see that was not that bad. And since then I try all the colors for my soups... of course with fresh ingredients. This one is a yellow one.
Let's try it ...
Ingredients:
- 750g peeled carrots
- 2 onions
- 480g celery (root)
- 2 potatoes
- 1 tablespoon olive oil
- 1 tablespoon natural vegetable stock (concentrated)
Directions:
- Put 3 liters of water to boil.
- Cut the carrots in big slices
- Slice the onions
- Dice celery and potatoes.
- When the water is boiling, add all ingredients.
- Let them boil until the carrots and celery are soft.
- Take a hand blender and smash well all the ingredients in the soup.
