This cake is perfect to have it with you as a snack during the day in the office. My daughter asked for a piece every day for her snack at kindergarten.
Ingredients:
- 250g grated carrots (or the pulp that remains after extracting the juice out of carrots)
- 60g walnuts + some for decoration (I used 16)
- 1/2 teaspoon cinnamon
- 2 eggs
- 125g butter (room temperature)
- 200g all purpose flour
- 100g maple syrup
- 1 tablespoon baking powder
Directions:
- Beat the eggs, with syrup with a mixer.
- Add butter, cinnamon, baking powder, flour and mix.
- Add walnuts and carrots and mix well.
- Pour the composition in a pan.
- Bake for 1 hour in the preheated oven at 180ºC.
