I wanted to cook with lavender and when I saw this recipe I said... this is for me. With some little differences because the original recipe was looking like a rectangular loaf and my daughter expressed her clear wish for a round cake. Round to be then... but more than one and smaller ... of course, what could be else than muffins ?
A bit of violet color couldn't miss and to make it more interesting I have hidden some Turkish delight in the middle.

Ingredients:
- 150g all purpose flour
- 1 teaspoon baking powder
- 75g corn starch
- the zest of 1 lemon
- 2 tablespoons of dried lavender
- 100g sugar
- a pinch of salt
- 200g butter (melted)
- 4 eggs
- 1 tablespoon Cointreau
- a drop of violet food coloring ( you can combine blue with red to obtain the color you want)
- 1 piece of Turkish delight for each muffin (14 pieces in total)
Directions:
- Beat the eggs and add the flour. Mix them together.
- Add the melted butter and mix.
- Add cornstarch and mix slowly.
- Add all remaining ingredients and mix until you obtain a smooth batter.
- Pour 1 big icrecream scoop of batter in cupcake paper shells.
- Place them in a muffin tray. I ended up with 14 muffins. You can also use silicone cupcake cases and in this case you do not need a special tray anymore.
- Hide the Turkish delight piece in each of the muffins in the middle.
- Bake them for 45 minutes at 180ºC
