Serve it with some tzatziki or just enjoy it as it is.
Ingredients:
- 2 cups of couscous
- 2 green peppers (diced)
- 1 fresh red chilli (cut in small slices)
- 5 spring onions (diced)
- a bunch of dill (chopped)
- 200g frozen peas
- 250g black olives (cut in half)
- 100g feta cheese (diced)
- 500g chicken breast
- the juice of 1 lemon
- 1 teaspoon dried oregano
- olive oil (for taste)
- oil for frying
- pepper
- salt
Directions:
- Cut the chicken breast in pieces of 3-4cm and fry it in a bit of olive oil until turns its color to golden brown.
- Boil the couscous in water according to instructions on the package. In my case, I used equal quantities of couscous and water. Yours might be different.
- Unfreeze the peas and cook them for 10 minutes in boiling water.
- In a large bowl add the cooled couscous, the diced green peppers, spring onions, dill, cooled peas, olives, feta cheese, lemon juice, oregano, olive oil, chicken, salt an pepper and mix
