Christmas is coming and I needed to refresh my skills to bake our traditional Christmas cake. I also had a very nice occasion to share it, the Romanian national day, the 1st of December.
Ingredients for dough:
- 250ml of milk
- 1 teaspoon of salt
- 125g butter (soft, at room temperature)
- 2 eggs
- 2 egg yolks
- 800g all-puprose flour
- 150g sugar
- 1 tablespoon of lemon zest
- 42g of fresh yeast or 3 teaspoons of dried yeast
Ingredients for filling:
- 430g poppyseed
- 400ml milk
- 3 tablespoons sugar
- 2 tablespoons vanilla extract
- 300g Turkish delight (cut in small cubes)
Directions for the dough:
- Put all the ingredients in a standing mixer and mix for 5 minutes.
- Cover the bowl with the dough and let it in a warm place in the room for 3h to rise.
Directions for the filling:
- In a casserole, add the milk and sugar over poppy seeds.
- Put the casserole on medium heat and let it boil for around 15 minutes or until the milk is totally absorbed.
- Let it cool completely and add the vanilla extract.
Directions to assemble the cake:
- Take out the dough from the mixing bowl and split it in 3. For bigger pans, split it only in 2.
- Stretch every part with a rolling pin and put on top the poppy seed filling and sprinkle the Turkish delight.
- Roll the dough with the filling from 2 sides and hold it well and put it turned over in the pan. Repeat the same for the remaining pieces of dough.
- Put in the oven to raise at 50ºC for 45 min.
- (optionally) Beat an egg and brush the cake with it.
- Increase the temperature to 180ºC and bake it for 30 min,
- Take it out and let it cool.

Multumim pentru reteta! Am si eu o intrebare: primele 45 de min se coace la 50 grade sau 150? Multumesc
Ana, temperatura de 50ºC in cuptor serveste doar la cresterea cozonacului. La fel de bine poate fi crescut si la temperatura camerei dar va dura mai mult ca timp. Coacerea se face la 180ºC (nu 150ºC) pentru o jumatate de ora.
