For this occasion, in the few time I had, I made a quick cake by combining the dark chocolate dough with a white chocolate filling. I did not add sugar as the white chocolate I had was very sweet.
The cake was so good that it disappeared very quickly in our stomach :)
Ingredients:
Dough:
- 6 eggs
- 6 tablespoons powder sugar
- 3 tablespoons olive oil
- 6 tablespoons all purpose flour
- 2 tablespoons cocoa powder
- 1 tablespoon vanilla extract
- 1 teaspoon baking powder
Filling:
- 600g white chocolate
- 500g whipping cream
- 50g butter
Sirup:
- 150g water
- 1 tablespoon vanilla extract
Directions:
- Beat the egg whites until foamy using an electric mixer. Add the sugar and vanilla sugar a little at a time.
- In a separate bowl, mix the egg yolks with the 2 tablespoons of oil
- Pour the egg yolks in the white eggs and mix slowly with up-down movements
- Add the flour, cocoa, vanilla extract and the baking powder
- Pour the resulting composition in a cake pane oiled with butter and dusted with flour.
- Preheat the oven and put the dough inside the oven around 40min at 180°C. Try the dough with a stick to see if it gets out clean, and if yes, then it's done.
- Let it cool over night or at least couple of hours.
- Cut the dough in 3 slices.
- Melt the chocolate with butter in bain-marie and let it cool a little.
- Beat the whipping cream.
- Add the chocolate into the whipping cream and mix gently.
- Layer the first slice of the cake and add 1/3 of the sirup.
- Layer the filling over the slice.
- Continue to add another slice + 1/3 sirup +1/ 3 filling, and the same for the last slice
- Grate some black chocolate on top or decorate it as you wish.
