Muffins with Turkish delight and vanilla


Two things that I didn't eat lately: Turkish delight and cupcakes. What a better combination for these 2?



Ingredients:
  • 150g Turkish delight (diced)
  • 125g butter (room temperature)
  • 2 eggs
  • 75g sugar
  • 150g all purpose flour
  • 1 teaspoon baking powder
  • 1 tablespoon vanilla extract

Directions:
  1. Mix all ingredients except Turkish delight with a standing mixer. If you do not have one, mix dried ingredients and wet ingredients separately, then pour dried ingredients into the wet ones and mix all together.
  2. Add the Turkish delight and mix gently.
  3. Butter 10 cupcake silicone cases.
  4. Pour 1 tablespoon of the mixture into each case
  5. Bake in the preheated oven at 180ºC for 30 minutes.
