I wanted to try a pie recipe with vegetables. What is more appropriate than sweet potatoes? Look at the result ...
Ingredients:
- 1 shortcrust pastry (400g) - see the recipe here
- 3 cups of sweet potatoes pure ( from 4-5 medium size potatoes )
- 1/2 cups brown sugar
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 75g butter (room temperature)
- 1/2 + 1/2 cups milk
- 1/4 cup sugar
- 3 eggs
- 1 tablespoon vanilla extract
Directions:
- Roll the dough and lay it in a non-stick pan (or use a baking sheet)
- Mix pure with brown sugar, nutmeg, cinnamon and 1/2 cup of milk. I made the pure using an electric mixer, so all these ingredients were put inside.
- In a bowl, beat the eggs, add sugar, the other 1/2 cup of milk and the vanilla extract.
- Pour the pure over the eggs and stir.
- Pour the mixture in the pie crust and cook in the preheated oven at 190ºC for 1 hour.
