Ingredients :
- 1 1/ 3 cup all purpose flour
- 1 cup sugar
- 6 eggs (whites and yolks separated)
- 1 1/ 3 cup olive oil
- 1 tablespoon lemon zest
- the juice of one lemon
- 1 tablespoon vanilla sugar
- 1 tablespoon cocoa
Directions:
- Beat the egg whites using a food processor.
- Add sugar and vanilla sugar and continue to beat until they becomes a shiny foam.
- Remove the bowl from the food processor and add the egg yolks one by one, stirring gently with a spoon from the top to down.
- Add oil little by little and mix slowly.
- Add lemon juice and lemon zest.
- Last, gradually add flour.
- Brush a big rectangular pan with oil and dusted with flour.
- Pour the mixture into the pan, still keeping 4 tablespoons of the mixture into the bowl.
- Add cocoa and stir well until it incorporates.
- Pour over the previous mixture.
- Preheat the oven to 200ºC and bake in the oven for 10 minutes.
- Reduce temperature to 180ºC and let it cook for another 40 minutes.
