A traditional Romanian soup, very easy and very healthy. It is my favourite soup, I do it very often for my family and is simply delicious.
Ingredients:
- 2 big chicken breasts
- 1/4 of a big celery root
- 3 carrots
- 2 tomatoes
- 1 yellow pepper
- 150g frozen or fresh peas (optional)
- 150g green beans (optional)
- 5 potatoes
- 2-3 hands of noodles
- 2 chicken stock
Directions:
- Fill half of a pressure cooker (mine is 9L) with water and start heating it open.
- Cut the chicken breasts into cubes and put them into the pressure cooker. Then close it and wait to indicate that the valve of the pressure cooker has reached the boiling point. When this happens, close the valve, reduce the heat to half and let boil for 15 minutes
- During this time, dice the carrots, peppers, celery and tomatoes. Cut the green beans into pieces around 2cm long. Cut potatoes into larger cubes than the other vegetables.
- When the meat is cooked (15 min has passed), remove the pressure from the cooker through the valve and open the pot. Add the noodles, chicken cubes, and all cut vegetables including peas.
- Close back the pressure cooker pot and let it simmer for 10 minutes after the pot begins to boil. That's all.
It is not necessary to have a pressure cooker for this soup. It works very well using a normal pot, but in the pressure cooker and vegetables are keeping their shapes, and they keep their vitamins better. Other pressure pots may have other instructions, so please read the manual. When serving, you can add chopped parsley, sliced chilli and lemon juice to taste.
